LINGUEIRÃO RICE

The idea came from a customer who once challenged them to make this dish. And they thought: “Why not?” It was her quest to make the best lingueirão rice possible that led Teresa to explore and refine the dish, which has now been a house special for over 15 years.

Simplicity is the rule of thumb. Lingueirão already has a strong palate, so you have to complement its flavour without masking it. It’s seasoned with the basics - garlic, onion and white wine - then fried. The trick is to use a good source of fat, extra virgin olive oil and butter. A final touch of coriander makes this dish one of the most popular in the house. It can be served to the customer’s taste, as a starter, side dish or main course.

GOAT FROM THE OVEN

A dish that has always been a specialty, one which was a family recipe and which they then brought to the restaurant. It is a dish that is made especially on Sundays at Retiro do Camponês, and is part of the menu, but must ordered 24 hours in advance. Preparation time is the key ingredient for this dish.

BLACK PORK

The best Portuguese meats are selected directly from a meat producer in the Alentejo. Black pork has been a speciality for 18 years. Grilled over charcoal, the meat is cut to serve, its soft texture melting in your mouth, its homemade flavours unmistakable as meat that has come out of the fields right onto your plate. Choose between ribs, loin, tenderloin and back, loin and mixed chops.
